Dear Mr. Quaker Nutritionist,
How did you come to work for Quaker? Do you need an intern? A researcher? Even someone to do grunt work in the hopes of learning from you!? I’m that person! My e-mail is attached if you have positions open at Quaker for someone getting her RD certification in the next few years who has a bottomless pit of enthusiasm and love of food industry knowledge.
That’s me! Please to contact!
Best,
Amanda

October 20, 2008 at 4:11 amBecause I cruise the web far too much, my nutritional questions end up being way too obscure to be helpful for a general audience. Plus they’re not the least bit oatmeal related! See how useless these are?
For example, does soy milk adversely affect the antioxidants in tea like regular milk does in some studies (but not in others?) I hate drinking tea without milk.
Are blue potatoes enough better for you than regular ones that it’s worth the extra time/money chasing them down?
Is the whole trying to get Omega 3 from plant sources and fortified processed food really a misplaced nutritional goal? Should I believe the folks who say we just should just choke down more fish or fish oil pills instead because of the ALA, EPA, and DHA thing?
See what I mean? Most people would be going zzzzzzz….
But it’s great that you’re bringing on an actual expert to answer questions–looking forward to the follow up.

Ok, a question. Why is it that if I eat a serving of the Old Fashion oats I am full for approximately 18 hours, but if I eat an instant packet (approx. same calories I think), I am hungry in approximately 18 minutes.
Thanks!

October 20, 2008 at 4:39 amHey Quakerman (love how I can be glib to professionals on the internet)! HERE’S a question –
When I’m trying to lose weight, I keep my carbs much lower than normal. I have oatmeal for breakfast, then no more grains, refined or starchy carbs (bread, pasta, potatoes, rice, sugar, you know the deal) for the rest of my day. I get all my carbs from vegetables, that’s it.
My question is this: when I’m on this plan, I get INSANE cravings for sweets. As in gummy sweets, candy, chocolate, all that business. I can leave the bread aisle alone no problem, but I linger longingly outside the sweet shop forever, which is most unlike me.
Does a lack of complex carbs in the diet (maybe even in a high protein diet) contribute to a need for refined sugars? Can we cut cravings for sweets by eating more wholegrains?
I know wholegrains contribute to satiety, but is there a more scientific reason why I WANT CANDY specifically when I’m eating high protein, low(ish) carb?

Ok, here: How can I fit oatmeal into a breakfast that is not sweet? I loathe sugar in the morning – I eat vegetables and sandwiches and hummus. Is oatmeal as healthy if you eat it raw? Make oatmeal and (waitforit) insert cubes of laughing cow into it. Let them melt. Stir. Cram in my piehole, errr chickenhole (to stay with your not sweet seeking).

I also wanna know when they’re adding protein. π

ANYHOW – here’s my question for Mr. Quakerman:
Are human bodies all about the same when it comes to nutrition needs? Or are there some (like the previous questions would suggest) who just do better with more carbs than others? I know people can survive on a multitude of different diets but what about THRIVE? The government and many popular diet programs seem to treat us like it’s one-size fits all.
Thank you Miz (seriously? No dressing up??) and QuakerMan!

October 20, 2008 at 6:57 amGreat rhyme!
This is my PROBLEM…I seem to only lose weight and keep it off by eating very low carb. I did this for 2 years and I stayed at my goal weight. Fast forward to now. I have gained back those pesky 20 lbs because you know it is very hard to stay low carb. I would say I eat right for 90% of the time. On weekends we may get pizza or I may have some other higher calorie foods that I don’t normally eat, but again for the most part I think I eat well. Exercise also plays a major part in my success. I see the best results when I am working out at least 5 times a week. Well, I must say that I don’t always get 5 days in. It is just so frustrating when I feel I eat right and exercise for the most part, but I don’t get the results that I feel I should. Btw, I have even done the food dairy and tracked every calorie. I guess my main question is can a person’s body not tolerate carbs like most people, even when they are not “bad” carbs? I am thinking this is my only hope.

Crabby: I read somewhere that Vitamin C helps protect the antioxidants in tea from stomach acid (meaning more antioxidants survive digestion), so perhaps you could try tea with lemon and honey (which also has anticancer stuff)?
And for more protein: Try protein powder & oatmeal.
And a comment: I’ve found that I can sub half the white flour in a recipe for oatmeal without there being serious consequences for the taste of the finished product (you can probably grind the oatmeal in a coffee grinder to get a more flour-like texture too).

Assuming these are questions for the Quaker guys… Mine have all been asked, but I’ll repeat:
Why no steel-cut oats (Irish oats) from you guys?
—–
I believe the reason folks feel “fuller, longer” on regular oats is that the instant ones are processed more so they cook more quickly. So your body had to work less to digest them. The slower and longer you cook your oatmeal, the more filling the final product will be.
———
MisFit, peanut allergies are so pervasive in the US today, that they wouldn’t be able to process a food with peanuts in them and not complicate their whole packaging process.
———-
Oh, and BTW, thanks for not thinking I’m an “older” woman.. coming from someone who was born when I was a teenage? It’s a compliment.

October 20, 2008 at 9:37 amMy question: I try to get in 60 grams of oatmeal daily to keep my cholesterol down. I like the Old Fashioned Oats, but I lightly pan-toast them before I cook them. Am I losing any nutrients or benefits by doing that?
P.S. Just a comment, I find that when I finely ground up about a 1/2 cup of oatmeal & mix it in my protein shake with a bananna, It keeps me feeling fuller much longer. Guess it’s the same principle as adding baby cereal to formula.
tfh says
October 20, 2008 at 9:44 amOoh, so we get to ask any nutritional qs? Not just oat-related?
Oh, well. Mine is oat related. Currently I’m eating a brand of hot cereal (Wessex, sorry Quaker) that isn’t just oats. It also has rye, triticale, golden flaxseed, and barley. It’s highly tasty. So Question #1 is:
Is Quaker– which is much more accessible I think to most people than Wessex, Bob’s Red Mill, even rapidlygrowing Kashi– considering taking hints from these more “natural” or health-food-consumer-oriented type brands and introducing other whole grain breakfast cereals/blends to consumers under the Quaker brand? Have you already and I missed it?
AND if I may:
Is there really any health/cholesterol-lowering advantage to oats over, say, rye or triticale or barley or rice or whole wheat or quinoa and other whole grains we might eat?
AND (because why not be greedy with my questioning) why do my steel cut oats have significantly more protein (well, 4 more grams, do dieticians consider that significant? my stomach does) than my rolled oats for 1/4 cup sc vs. 1/2 cup rolled?

October 20, 2008 at 10:00 amIt took me something like 50 of 57 posts to realize that HFCS is high fructose corn syrup. I’m so behind the times.
We only eat the old-school oatmeal, but we do usually get Quaker (unless I have a little wiggle room in my grocery budget and buy organic). My son LOVES it with blueberries cooked in (none of us add sugar).
But that’s not my question for Mr. Quaker Nutrition Man. My question is:
Is it true that people have different nutritional needs based on their blood type? My son and I have O+ and someone claiming to be a nutritionist told me that we therefore need more red meat than my husband, who has A. My son and I both hate beef, but do seem perkier when I include bison in our menu once or twice a week. The rest of the week, we have chicken, tuna, salmon, tilapia, tofu, and eggs.

October 20, 2008 at 12:38 pmI think a lot of us would like to know about the soy milk / antioxidants/tea question, not just Crabby.
But also: if one is about to do a marathon or triathlon, how much in advance of the event should oatmeal be eaten in order to digest well but still provide the peak energy benefit?
And: do you buy into the idea that people can be “food sensitive” and that a blood test can help determine this?
Thanks, Quakerman!
Marianne says
October 20, 2008 at 1:22 pmI would not rely on the blood test for food intolerance. As part of my work at food allergy mixer I took an IgG blood test (poked myself and sent in blood to the lab) and it came back that I had a mild reaction to dairy, and a severe reaction to eggs. Now, I eat eggs almost every day and never have a problem, but put a schmear on my bagel and stand back. Blood tests are really only conclusive for true allergies (those which cause anaphylaxis). The current thinking is that only 3% of the population has a true allergy, and the rest are sensitivities or intolerances. Check out faiusa.org to see what they have to say about all the tests.

I don’t do oatmeal but I enjoy a bowl of your instant grits (mixed with chicken for protein) every now and again. I glanced at the ingredient list for the cheese flavored instant grits and I noticed that there is some partially hydrogenated oil in there. Apparently there isn’t enough present to warrant a spot on the nutrition label but no amount of trans fat is good. Any plans to get rid of this in your flavored grits? Yes I know I could eat plain but I like the other flavors better!

October 20, 2008 at 3:19 pmDear Mr. Quakerman,
Why are instant oats so much less voluminous than old fashioned (or even quick) oats?
And why do quick oats get so HUGE when I cook them in the microwave? Every time I make quick oats in the microwave, I end up, at some point, DASHING across the kitchen to turn it off before the overflowing-oatmeal situation makes a huge mess?
(But, at the same time, why is it that the quick oats don’t taste fully cooked until they start puffing up and overflowing from the bowl?)
Also, are instant grits whole grain? If not, can you make them be? What about cream of wheat?

I don’t really have any Qs. Problem is, I know what to do, I lack the will power to do it!

October 20, 2008 at 7:30 pmThis is my first visit to your blog. Great video – I love all the rhyming! My question is this, and it’s a little similar to some other questions:
Is their any scientific evidence that restricting carbs actually results in greater fat loss than eating the same amount of calories, but with more carbs? My friend and I are currently debating that one!
Also, I’d love to hear your take on the HFCS question as well. With all the hype about it, I’m not sure what to believe!

October 20, 2008 at 8:00 pmLove the rhyme, I am impressed that you could keep it clean….my 12 year old boy maturity always searches for the dirty words. ha!
My questions are right in line with everyone else. I am really concerned about HFCS.
My kids love flavored instant oatmeal, but I prefer them to eat the plain stuff jazzed up with raisin or a little brown sugar. Is there really that much nutritional difference between the two?

October 20, 2008 at 10:33 pmCan I just say that I am in awe of your poetry writing ability, MizFit? That is quite the skill π I always write poems like that for birthday and holiday cards, so it’s nice to hear your versions, too!
Dear Mr. Quaker Nutritionist,
I would like to steal Amanda’s words right out of her mouth. If you need ANYONE to work for you – I am your girl. I have looked online for entry level marketing positions with your company, but to no avail. I would love to start my career in marketing upon graduation this year, and working for a food company like yours is the ultimate dream. My email is in this comment and at your disposal!! And my self-promotion is officially over.
I do have some questions, though. Why is there HFCS in your oatmeal-to-go bars? And why is sucralose listed as an ingredient in products that do not claim to be “lower sugar?” These are just two things I noticed and was wondering about recently – thanks for your input!
Jenn (aka your entry-level marketing hopeful)

i really like question #61’s question.
i guess i should think of my own question…
ok my question: oats (and other high carb things) make me feel really sleepy that i tend to avoid eating it in the morning so i don’t feel sleepy all day. will pairing the oats (or other carby goodness) with a protein negate that sleepy feeling or do i just have to resort to eating less of the carby stuff?
question for mizfit: why do you wake up so early on monday mornings??
