And to me, it’s weights that are my brussel sprouts! Running is like my green smoothie–healthy but actually pretty darn enjoyable! But then I’ve never tried to go 26 miles. It would be like drinking green smoothies for every freakin’ meal and snack. (I blame my knees and feet but there are LOTS of other reasons I don’t have the motivation to give a marathon a go).

Cut off the stem ends, halve them lengthwise, toss with olive oil to coat, kosher salt and pepper to taste, and bake at 400, shaking occasionally, about 30 minutes or until they are golden brown (easiest to tell on the cut side. Mmmmmmm!
Now a marathon? THAT’S unpalatable!!! LOL
