This week’s guest chef is none other than Thinking Thin.
A funny inspiring blogger whose recipes I so thoroughly enjoy (if by enjoy you mean actually make—-which I do) that I beggedpleaded & lured her over to the MizFits for a guest post.

I have struggled with my weight from the day I was born. I remember my fourth grade physical. I was 114 lbs and for some reason that memory has always remained with me. Over the years, I have tried to lose weight and I would lose 20 lbs or so and then hit a “plateau” and I would give up. This time is different. I haven’t given up. I have decided this last time of trying that it will always be a process of making better choices. I don’t need to make better choices all the time but if I make better choices more often than poor choices, the weight will eventually come off. It maybe slow, but slow and steady wins the race, right?
Over the course of many years I have learned that I need to modify my eating habits, mainly of what I eat. Portion control and snacking has never really been a problem for me, it’s been the types of foods and how it was prepared that has caused the problem (I believe). I have learned to modify really tasty food to be healthier and still quite tasty. I am still not where I want to be and nowhere near an expert but I am a work in progress. Every little bit counts!
Here are some of my favorite quick recipes…
I am not one to spend a great deal of time in the kitchen. I am cooking for one so I am always looking for quick meals. I have found numerous uses for fat free honey mustard dressing so these are the “recipes” I am giving to you. The “fried” veggies are to die for if you like tempura
Preparation time for each of these is about 10 minutes, tops. Can’t beat that!
Honey Mustard Chicken
Ingredients:
- Boneless, skinless chicken breasts
- Low fat honey mustard dressing
- Crushed corn flakes
Instructions:
1. Dip chicken breasts in the dressing and coat with the crushed corn flakes.
2. Cook until done. I tend to cook it until the edges get crispy…yummy!
“Fried” Vegetables
Ingredients:
- Assortment of vegetables – I like to use broccoli, cauliflower, green beans
- Low fat honey mustard dressing
- Crushed corn flakes
Instructions:
1. Dip vegetables in the dressing and coat with the crushed corn flakes.
2. Cook until desired doneness.
Honey Lime Chicken
Ingredients:
- Boneless, skinless chicken breasts
- ¾ cup Low fat honey mustard dressing
- 3 tbs lime juice
Instructions:
1. Marinade chicken in ½ of the marinade mixture for 2-24 hours. (Refrigerate other portion of marinade).
2. Remove chicken from marinade and throw out the remaining marinade.
3. Grill/broil chicken brushing remaining marinade on chicken until done.

That’s such a good idea to use dressing as a baste! Those sorts of recipes normally call for egg whites, which are no good for my VeganBoy.
Although does “cook” translate as “cook however the hell you like”? Could I chuck em in the oven? I don’t like frying things because my pans are rubbish and food always sticks.

I love Thinking Thin’s attitude toward weight loss. It IS all about the slow and steady, and IMO that’s the best way to make the changes stick. That was my approach for years, baby steps, which I will occasionally abandon in favor of some “amazing plan” which causes me frustration and misery, quit, and go back to what works.
I want some of those mock-tempura veggies! Thanks, Thinking Thin, and good luck on your fitness journey. You’re definitely off to a great start.

Wow, I love recipes with just a few ingredients and simple instructions. Just need to buy me some honey mustard dressing and I’m all set!
This does sound good, although my grocery store only carries a couple of honey mustard dressings, and I’ve tried them all and they’re all just kind of eh. Any suggestions for a tasty low-fat honey mustard dressing? I don’t like mine too sweet…

Dudes, honey and dijon mustard; mix until it’s how you like it. I have been known to add mayo for a creamier dip for my kids.
I may make the lime chicken as my Dad is here to visit and he hates it when I “fuss.”

Aww, having to deal with weight issues at a young age must have had a huge impact =\ It makes me sad that kids at this age even have to feel that way.

As for the honey mustard, I will probably make my own, as Marianne suggested. I love Plochman’s natural stone ground mustard. Nice texture/taste.

Yummyness! I used to have a great recipe for cornflake chicken but it was always a really long process to make it- this looks much simpler.

even in my nondistorted thinking I clearly recall one year—-when I must have grown a bunch?—being weighed in from of my class and having gained 10 pounds or so.
I remember thinking, in my badatmathEVENTHEN way, “DANG. If I gain ten pounds every year from now on (pause and run a few numbers) Im gonna be huge. Interesting!”
Im thinking that they no longer do that.

My youngest just finished grade 4 and I asked how they did the weighing this year. They lined all the kids up and call 2 at a time. They weigh them, check their vision and hearing. She said there are 2 scales and you can not see the other one.
I’ve used hot sauce as my binder for crispy things before, but never thought to use honey mustard!! I love how eay, yet delish these recipes look!! I can’t wait to make that honey mustard chicken. Mmm… drooling now…

I make something similar to the fried vegetables except I use flaxseed instead of cornflakes. Yum!! I also make my own dressing with dijon mustard, honey, and a bit of greek yogurt. It’s sooo good and way more nutritious (and cheaper) than many prepackaged versions I’ve tried!

Thanks for the recipes. The only use I’ve ever had for corn flakes is my childhood eating competitions with my brother. We would see who could eat an entire box in one sitting.
I guess that might explain my weight issues.

The honey mustard chicken sounds interesting. I have a similar recipe, but that recipe uses a sauce that you brush on the chicken and the sauce has butter. So I’m guessing this recipe is healthier. Thanks, I’ll give it a try.
These all sound like awesome recipes! It bugs my kids when I make chicken and broccoli – so now maybe this will be a reason for them to enjoy the real merits of both chicken and broccoli. A couple of more bullets in my arsenal!

I was looking at honey mustard recipes and most of them are pretty much 1/2 honey, 1/2 mustard (ya figure?), but some have you adding mayo or miracle whip. Don’t know, that kinda adds a yuck factor. What do y’all think?

What a great story and I can relate – I struggled with my weight while still in the womb. After 37 years of battling the bulge I finally one the war – I went from a 16 to an 8 and it was the toughest fight of my life but so worth it.
Thanks for sharing the story and for being an inspiration. I love her philosophy as simple in this case is so much better. I would always think 1lb at a time as the quick fix is crap and does not work.

The kids all said it was the best chicken and broccoli I’ve made – and I’ve made them a lot of both.
