I like to think of Sahar as one of my accountability partners in this crazy thing I call my worklife (surprise, Sahar!) for many reasons & the least of which being how amazingly organized, motivated & chock full of role model’y goodness she is.

For as long as I can remember, healthy food and exercise have been a big part of my life. So I feel very fortunate that I was able to make a career out of doing what I love – covering diet, exercise, and other health issues as a TV news health reporter for 12 years. I love trying new, healthy foods (and the occasional gourmet chocolate) and I’m always looking for different ways to make exercise fun – I have to mix it up or I get bored! As for reporting, I’m still sticking to my passion for diet, fitness… oh, and reversing the obesity epidemic… over at my website – FatFighterTV.com.
This is a recipe for hummus that I got from my dad who is from Egypt, where hummus is as common there as fast food is here. It’s already typically a healthy dip with its good fats and all, but I decided to make my own version just a little lighter anyway since I’m always looking to save a few calories and fat when I can. So, mine has less olive oil (*see optional) and sesame paste than my dad’s original version. The garlic and spices give this fabulous dip a bit of a tasty kick. You can also use it as a spread on a sandwich. Enjoy!
FatFighterTV’s Hummus Recipe
1 (15 ounce) can garbanzo beans, drained, liquid reserved
1 Tbs. tahini (sesame paste)
1 lemon – squeezed for juice
2 garlic cloves, minced
1 tsp. cumin
ΒΌ tsp. cayenne pepper
ΒΌ tsp. paprika
ΒΌ tsp. salt
In food processor, puree garbanzo beans, tahini, lemon juice, and as much garbanzo bean liquid as needed to form a coarse paste. Add seasonings. Blend thoroughly. Transfer to a bowl and sprinkle with a little paprika. Serve with pita bread.
*Optional – you can also garnish hummus with olive oil and kalamata olives.
Totals in entire recipe, not including the garnish (Because breaking it down by tablespoons gave me a headache…): 480 calories, 17g fat, 2g saturated fat, 22g protein, 15.5g fiber

I like to make sandwiches with tomatoes, cucumber, bell pepper, onion, lettuce and whatever else sounds good thrown onto two slices of bread schmeared with hummus.

A yummy idea for hummus? I eat tons of tuna……..when plain from the can isn’t sounding so great, I make a tuna and hummus sandwich. My fav is spreading pita or bread with hummus, adding plain tuna and loading with some crunchy lettuce or cucumbers.

I love it! I’ve been eating a new one lately that I found at a local market. It’s a pesto hummus, not sure exactly what else is in it but it’s divine… yum, yum, yum.
I can eat hummus off pretty much everything. Crackers, bagels, garlic bread, spoon, finger, kitchen counter, probably the floor if really desperate. π
Recently I’ve been contemplating using it to fry up some veg in for my omelettes… I usually use home-made pesto for that but I think hummus could work too. Would it work on a burger too perhaps?!!

The streets are paved with hummus where I live, there are so many veggie and vegans in the hood.
I’m a freak and I spread it on apples, but I can understand why you might not go for that. I mix it in with salads too, like a dressing.
My recipe for hummus is almost identical to this one (chuffed as this one is blatantly authentic!) – I do a chilli lemon hummus with added lemon zest and chilli powder/jalapenos, and a lime and coriander one (everybody’s favourite) with lime juice instead of lemon, lime zest and fresh coriander (I think you folks call it cilantro, you pack of weirdoes).

I like to toast pieces of pita bread under the broiler for a bit and use them as chips to dip into the hummus, I like to ad chopped kalamata olives to it, I love it as a spread in a spinach and sliced boiled egg sandwich….
Hummus is AWESOME. I’ll have to try making it without olive oil, since I haven’t had it in aaages due to the calorie hit!

I think I have to give it another shot now – but I’ll definately be using Christine’s idea of adding extra garlic. Most things are so much better with garlic (ok, but I’m a garlic fanatic).

We (BOTH kids — even the picky one!) eat hummus on pita chips, crackers, veggies, and apples. My 3-yr old will eat it off her fingers if I let her. Not extremely creative, but I enjoyed it with my salad and it filled me up. Also good with raw veggies, pita bread, and triscuits (but the triscuit thing may just be me – I really like em).
And how can you not like Guacamole? Avocado, onion, garlic, tomatoes, lime juice…Add cilantro if you like it. Done. Sooooo good.

October 23, 2008 at 7:19 amCook up some ultra-garlicky chicken & dip it in hummus. HUGE YUM. I spent some time in Israel, and hummus comes with EVERYTHING. As Miz referenced to Don’t mess with the Zohan, it’s actually no exaggeration!!
My favorite (although it does seem like a creation made by a preggo woman) is the following:
Marinate some mushrooms,bell peppers,yellow zucchini and eggplant in balsamic vinegar & a tinch of olive oil & sea salt. Grill the veggies.
On toast or a pita: spread generous amount of hummus, and top with Feta Cheese. Add the grilled veg & Alfalfa sprouts. Party in my mouth!!
Yum Yum Yum. I just finished my breakfast & now I’ve got supper on the brain!
Anya: I’m in LOVE with Falafel. It’s really easy to make. I could live on it. It’s basically fried chick pea puree, but there are definitely healthier alternatives to this recipe, such as baking in the oven. Deep Frying is so not necessary.

I like to use a smear of hummus as a base for a wrap. Hummus, roasted red bell pepper, a little sliced lemon chicken (or not), fresh basil, and a sprinkle of feta cheese. Divine! But the spoon in the mouth method of eating hummus works well too!

If anyone is worried about fat, you can use white cannelini (great northern beans) beans instead of garbanzo beans (or 1/2 and 1/2) for a little less fat. It makes a smoother paste but still yummy!
I like it best as someone else mentioned – on a sandwich. I love a thick shmear of hummus, sliced cucumbers, alfalfa sprouts, and a tiny drizzle of balsamic vinegar.

Also make mine basically the same, except I started using water instead of the canned juice to cut down the sodium. Oh, and lots of garlic. And I never actually measure anything. I got my “recipe” from an old boss who was also Egyptian. You can also make it creamier so it is more of a dip when yopu make it yourself (better to scoop up with broccoli) or more of a paste (better for sandwiches).

I *love* hummus, but don’t have a good recipe. I keep buying Tribe of Twelve Sheiks hummis (good stuff) and thinking “I should find a good recipe for this and make my own”. Hummous and baked hommemade pita chips are the best.
And as for guacamole? I have a killer guacamole recipe…spicy and chunky and delicious…don’t mock the guac people-it can be good π

October 23, 2008 at 9:28 amoh, I forgot to say… about a year ago I started substituting hummus for mayo in most of my meat sandwiches. I get different flavored hummus (Mediterranean, garlic, hot and spicy) and use them with sliced deli meats like lean roast beef, sliced chicken breast, and low sodium turkey slices. It adds just a little moisture to the sandwich and flavor without the use of cheese or sauces that tend to be high cal and low nutrition. Combine with your favorite greens and veggies on some sort of healthy flatbread, tortilla or wrap, and you have a great on the go low cal meal!
My friends say “you’re not supposed to eat hummus that way!” but my response is, “if it’s good, why not?”

Confession: usually I make hummus with the tahini outweighing the chickpeas, drizzle it with a few shots of olive oil, and throw on some pine nuts to top off the fat content. I’ll try this recipe, though. I often use hummus instead of salad dressing and I might as well make that a lower-fat substitution while I’m at it.

October 23, 2008 at 9:58 amI love hummus! I eat it almost everyday it’s actually really good with lime juice too! I put it on my salads, sandwiches, pita chips, pretzels, whatevers laying around, seriously!!! It’s a great kick at school making it is a lot of fun with the kids:)

Three ideas for using hummus: a dollop on top of spaghetti and sauce (I do this instead of cheese – it’s really good!), a sauce for a simple beans and rice meal, or use it in cracks around windows to weatherproof your home and keep your heating bills down this winter!

I love hummus, but it has to have roasted red peppers in it. So, I always add those. This recipe has some additional spices in it that i don’t use, so I know it’ll be good and I have the ingredients on hand. Yes! Hummus for me today! The nice thing is, my 9 year old loves it too. We dip it in pretzels, with crackers (love those Doctor Krackers-sunflower seed variation), etc. but, I haven’t tried a grilled cheese one. I wonder if you melted cheese on a low-carb tortilla and then added the hummus if that would be delish? I’ll have to try that one!

Re: the mayo – have you had REAL mayo? Not the kind you buy in the grocery store, but the kind you either make yourself or get at the healthfood store? The only things on the label should be eggs, oil and vinegar. Trader Joe’s makes one, if you live near a Trader Joe’s. That is the BEST mayo. Eggy, cream-colored goodness.
(If you’ve had real mayo, and still don’t like it, I’m not sure I can help you. You should see someone about that: the guac, the deviled eggs, the mayo. I think there’s something wrong with you. ;D)

October 23, 2008 at 12:49 pmMiz – have you tried Miso mayo?? It is FABULOUS. And it doensn’t taste like mayo at all plus it is vegan. They sell it at Whole Foods and it goes great on sandwiches, on wraps or in stir fry…it is in the refrigerated section near hummus.

I found these little “hummus to go” packets at the grocery store the other day and they’re in my desk stash. Have yet to try them yet, but now am getting lots of good ideas of how to use them. Thanks! (And, even better, now I’ve got a great recipe for making it myself.)

October 23, 2008 at 6:20 pmMy favorite non-traditional use for hummus is to spread it on homemade wheat pizza dough, top with goat cheese, a few sliced black olives, chopped basil and plum tomato slices…
Also, for falafel, you can just soak dry chickpeas overnight in at least three times the volume of water… drain, rinse and grind ’em up in a food processor. Here’s my favorite recipe, Graham Kerr Baked Falafels, http://www.grahamkerr.com/recipes/index.php?date=0404, except instead of a slice of pita, I use some raw quick oats (fresh parsley is critical though). These are baked not fried, as the name suggests, and so good I’ve been known to eat the whole batch in one sitting! (The sauce and relish are so-so, but if you have a dollop of fat-free Greek yogurt and some chopped seeded cucumbers – YUMMY.)

I started reading this morning, but had to come back to read more fab ideas and to post my comment. I first tried hummus in college, and don’t eat it very often, but I love it. A co-worker made some homemade a few months back, and she gave me a bunch, which motivated me to hunt down tahini at the middle-eastern store (haven’t found it in regular grocery stores here). So I made some for myself and the next day I had a weird allergic reaction on my face, and it was red and itchy, and totally swollen. Yikes!
But I’m still not sure what caused it. Because a few days later (after swelling was gone), the leftover hummus in the fridge was calling to me, and I ended up eating the rest of it without any symptoms. Who knows?
I like it on pita/triscuits/lavash/whatevs, or dipping veggies like carrots, broccoli, red peppers, and jicama. I love the idea of the pita with marinated roasted veggies (thanks butterfly!) and the pseudo-deviled egg. Yummo!!
I am totally going to make some right now.

My favorite use of (Trader Joe’s) hummus was on their whole-grain bread with a slice of muenster cheese. Healthy? Um, no. But totally delicious, and perfect for late-night study munchies!
