Welcome to this week’s installment of Did she really say we blend and EAT that?
same drill. take your excuses off the shelf where you put them last week, shake em up a few times, dust them off, put them back on shelf.
This blogger pointed out last week that the recipes are sort of heinous (my words) but they did make her ponder little things she could change in her family’s diet that might make improvements (paraphrasing).
That’s precisely the point.
Im aware Im an odd one in the truly embracing the food as fuel notion—-but by playing around with the recipe (perhaps making it a smidge less healthy and a tad more kid-friendly in some cases) you just might create something you really enjoy.
Fasten your seatbelts it’s gonna be a healthy ride.
MizFit’s Muffin in a Moment. (M-Cubed?)
Serving Size: 1
1/4 cup flax meal
1/2 teaspoon baking powder
1 packet splenda packet/agave/honey/something to sweeten
1 teaspoon cinnamon
1 large egg
1 teaspoon butter
Put the dry ingredients in a PAM SPRAYED coffee mug. Or a bowl for a different shape.
Stir.
Then add the egg and the butter. Mix.
Microwave 1 minute (or more. it’s a trial and error depending on your microwave).
Take out. slice, butter/peanut butter/light cream cheese? and happily eat.
Set mug to soak immediately.

Flax Seed Pancakes
3 tbsp flax meal
2 eggs
1 tsp cinnamon
1 tsp baking powder
1 tbsp heavy cream
splash of vanilla
mix in bowl (me? I use a blender but then I dont own a hand mixer. shocking, I know) and pancake-up in a pan.
Eat. Be energized. Have a fantastic day.

And more of us should embrace food as fuel. The only time I probably did this for real was in the ‘mala. There was so little that felt safe to eat in the first few weeks but had to eat in order to strap child to chest and walk miles for water. (Hehe…don’t you love how I make it sound like I should have traded some personal possession for a donkey?)

When I first got home from the ‘Mala I rejoiced in all the chickenbus we couldnt find there and was E-X-H-A-U-S-T-E-D all the time from the processed cr*p spiking and then crashing my blood sugar.
I literally plopped on the couch one day and looked at her and said:
please dont need me.

In fact, your flax-seed pancakes reminded me of my recipe for whole-wheat & wheat germ banana pancakes. ๐
(and I’ve used flax-seeds in my baking in the past, too)

Really? You can truly microwave a muffin? I’m picturing something gloppy and horrible but perhaps I should give it a try. I’m a big fan of convenience and I trust your judgment on these things.
Um, if one does not by chance have flax on hand is there another healthy substitute you can think of that might work?

First of all never, ever trust my judgment on anything food related.
I know I say it all the time but it does bear repeating. Renaissance Man hath been known to gag at the mere sight of my meals.
ALL THAT SAID the Muffin in a (Mc)Moment is actually quite gloppygood!
Since you dont have any flax (for shame! for shame!) I would try oatmeal ground up (in a coffee grinder?) perhaps?
or not ground up but the packet oatmeal-kind where they have processed the chickenbus (and nutrients out of it) so it is “finer”?
Alas, I have no great suggestions but await your goooopy findings.

March 6, 2008 at 10:23 pmPerhaps I’ll just have to buy the damn flax seeds, which I know I should be dumping all over everything anyway.
I try to take the lazy way out and just swallow fish oil capsules to get my omega 3’s, but I suspect you’re on a Higher Path. Plus I can’t imagine muffins taste very good with fish oil in them.

As for the pancakes, can I use something else in place of the heavy cream? (I’ve got everything else in my kitchen right now!)
