Around here we live our lives like an Arrested Development episode.
On many a morning you’ll find one of us shouting the opening lines to the series and, most likely, same person cracking up at him/herself.
(this blog is a play on the word MISFIT for a reason…)
Breakfast is also our dinner.
We both frequently eat traditionally dinner foods in the morning (hello brown rice & eggs!) and it’s our *family meal.*
For the same reason I exercise in the a.m. (I put on MY oxygen mask first!) we never know what will happen as the day unfolds so we gather as a family *before* life can intrude.

Gone were mornings filled with protein & power muffins and in-in-in-intruded some less than healthy fare.
Even though the Tornado is moving toward intuitive eating, crap eating begets crap eating which results in mama being told by school her child is an emotional roller-coaster less than stellar academic performance.
Or, if youre a big person, crap eating begets crap eating which results in less than fantastic LIFE performance & ENERGY levels.
Thankfully the Tornado is interested in helping create her morning meals. A fact this non-foodie mama adores.
Not to my surprise (& reason #48 why Im smitten with this partnership) she decided to make eggs our Back to School BRAIN FOOD protein**.
She can do most of the meal making & *I* know eating the tattooed oval will carry her through her school day.
- Eggs contain vitamin B12. This is *very* important to me as Alzheimers runs in my family. B12 is also essential for protein metabolism & converting carbohydrates, fats, and proteins into energy. The tattooed ovals have 3 times more B12 than ordinary eggs.
- Eggs contain vitamin B2 (Riboflavin): B2 is CRUCIAL in the production of energy as it helps convert carbohydrates in to sugar which fuels our bodies.
- Eggs contain vitamin E. This is an important antioxidant that helps to protect cells/tissues. Each of my FAVE Eggland’s Best eggs contain 10 times more Vitamin E than ordinary eggs. 25% of the recommended daily intake of this vitamin.

If I’m feeling extra-super-foody, I’ll add chia and ground flax to my oatmeal along with some nuts/nut butter and fruit/dried fruit/PUMPKIN! (Other folks can have their Pumpkin Spice Lattes… I’m having Pumpkin Spice (& Almond Butter) Oatmeal!)

September 16, 2013 at 8:13 amI’m with you…sometimes it’s just too much to do the whole frying pan thing. Sometimes I’ll do some cottage cheese with a fruit. The cottage cheese is higher in protein than an egg and good for those lazy mornings. If I do that I’ll stick to hard boiled eggs to have on a break to get more protein and some healthy fats.
Otherwise, when I do get my “brain food” in the morning I’ll usually do a nice scramble with onions, kale, a little cheese, and another veggie. Eggs are one of the best ways to get some veggies into the diet.

September 16, 2013 at 4:42 amI eat eggs almost every day for breakfast! I usually have an Eggbeaters omelet, but lately I’ve been making an egg and cheese sandwich with EB eggs and a sandwich thin. I use one whole egg and one egg white and Tiger Lilly gets the extra yolk. No matter where she is, when she hears me spray the cooking spray, she comes running for her egg yolk! I love that egg-framer!

I do actually eat food, just not til I actually feel hungry which tends to be mid to late morning. Lately I have been eating Qi’a cereal with fruit.

Mini-quiches!
You can buy the pre-made, no-sugar pastry shells or make them yourself. Add some chopped veggies, a little protein and cheese and fill to the top with scrambled eggs mixture. Bake for 15 minutes and you’re good to go!

It is great because once you have your egg base, you can make them all the same or add different ingredients into each one. Pop them in the microwave in the morning and you are off to a great start!

I’m not so great with the recipes (I very much so make things up that I have on hand all the time and they aren’t worth repeating! lol), but I love eggs for every meal. I make them in the microwave at work if it’s all I have, for breakfast in the form of eggs scrambled with oatmeal-ish toppings or fried up with random veggies from the fridge. Google it. (gotta get around to doing a post about it). My paternal grandmother had Alzheimer’s. Wish I had known about coconut oil prior to the onset of her condition.

But on the note of breakfast and brain food, it’s been top of mind lately especially with the start of school.
